Vegetables Raisins Rice
- It is widely believed that Iranian cuisine is the god father of rice recipes after Indian subcontinent in ancient times. - Iranian rice includes a lot of varieties and rice growing is a traditional occupation in northern Iran. - Persian rice cuisine is prized for their aroma.
Ingredients Description
- 1½ Cups AbuKass rice
- 1 Onion, chopped
- 2 tbsp. Garlic cloves, minced
- 4 tbsp. Oil or margarine
- ½ Cup almonds, shredded
- ¾ Cup raisins
- 2 tbsp. turmeric
- ¼ tbsp. cinnamon
- 3 Cups chicken broth
- Salt & Pepper as desired
Preparation
- In medium sized skillet, heat oil and pour onions and almonds, stir for 5 minutes or until the almonds are golden, add garlic and sauté.
- Pour in rice and raisins, then turmeric, cinnamon, salt and pepper. Finally add broth and bring to boil; cover lid and reduce heat, cook for 20-25 minutes or until rice is tender.
Notes
Serve warm with desired salad or yogurt.
