Vegetables Raisins Rice

- It is widely believed that Iranian cuisine is the god father of rice recipes after Indian subcontinent in ancient times. - Iranian rice includes a lot of varieties and rice growing is a traditional occupation in northern Iran. - Persian rice cuisine is prized for their aroma.

Ingredients Description

  • 1½ Cups AbuKass rice
  • 1 Onion, chopped
  • 2 tbsp. Garlic cloves, minced
  • 4 tbsp. Oil or margarine
  • ½ Cup almonds, shredded
  • ¾ Cup raisins
  • 2 tbsp. turmeric
  • ¼ tbsp. cinnamon
  • 3 Cups chicken broth
  • Salt & Pepper as desired

Preparation

  • In medium sized skillet, heat oil and pour onions and almonds, stir for 5 minutes or until the almonds are golden, add garlic and sauté.
  • Pour in rice and raisins, then turmeric, cinnamon, salt and pepper. Finally add broth and bring to boil; cover lid and reduce heat, cook for 20-25 minutes or until rice is tender.

Notes
Serve warm with desired salad or yogurt.
