Mansaf

Ingredients:

  • 1 KG beef, cut in pieces
  • 4 cups of basmati rice from Abu Kass
  • 1 cup of Jameed
  • 1 cup whole milk buttermilk
  • 1 cup of yogurt
  • Parsley
  • Nuts
  • 1 tsp Turmeric
  • 1 tsp mixed spices
  • 1 tsp salt
  • Cardamom kernels
  • 2 bay leaves
  • Cloves
  • 1 onion
  • 1 garlic clove
  • Saj bread
  • 4 tbsp ghee

Instructions:

  • In a saucepan, put the oil, spices, onions, garlic and meat to cook for an hour and a half.
  • Put the yogurt, buttermilk and jameed in a blender. After that, put the mixture on the stove, stir it and put a spoonful of mixed spices, a teaspoon of turmeric, 1 piece of chicken broth, a quarter of a teaspoon of salt and a cup of meat and meat water. Leave on the stove to cook for half an hour.
  • Wash Abu Kass Mazza rice , then put it on top of the meat broth and two large spoons of ghee, water and salt to cook for half an hour.
  • Bring the serving plate and put the saj bread and the rice, then the meat and yogurt and at the end decorate it with parsley, nuts and put the rest of the yogurt on a separate bowl.
